Mojito

Ingredients

  • 1 flat tbs Raw Sugar
  • 25ml Fresh Lime Juice
  • 1-3 sprigs Fresh Mint
  • 45ml Cuban Rum
  • Sparkling Water
  • Ice
  • Lime (for decoration)

Instructions

  • 1Use a straight sided 10oz (half-pint) or similar glass
  • 2Add one measure (25ml) of fresh lime juice in glass – you must use freshly squeezed lime juice. Best to get slightly yellow limes as they are juicier and roll them hard on a table with your hands to help get the juices flowing before squeezing
  • 3Add a flat tablespoon of raw sugar – this is the golden sugar which is readily available and comes closest to the sort of natural sugar originally used in Cuba. Don’t use brown or demerara sugar as the flavor of this is too strong
  • 4Add 1-3 sprigs of fresh mint depending on size – nip off only the bottom of the stalk – leave the leaves on the stalk or they will float to the top
  • 5Crush the mint together with the sugar and lime juice with a muddler – if you don’t have one, the blunt end of a kitchen implement will do - two or three crushes should be fine, don’t overdo it, but remember that the glass should not be full of mint when you have done this. Mint is very strong and you don’t need that much
  • 6Add just under two measures of white Cuban rum – 45ml is the ideal amount
  • 7Add sparkling water so that the glass is about two-thirds full and stir
  • 8Add chunks of ice – not crushed ice as this melts too quickly and dilutes the drink
  • 9Garnish with a lime wedge, sprig of fresh mint - and two straws so you can drink it quickly!
